Sally’s Summer Recipe
My garden is overflowing with basil, so I whipped up some fresh pesto! Since I'm super busy all week, I usually toss an organic roaster chicken in the crockpot every Sunday morning to use throughout the week (think stir fries and salads).
I recently discovered Konjac noodles (no carb, cellophane-type noodles) - they're bland on their own, but with the right sauce, they're amazing!
Tonight's low carb, super easy meal came together in just 5 minutes:
- Sautéed a few cherry tomatoes from the garden in olive oil until soft 
- Added some of that crockpot chicken 
- Stirred in rinsed Konjac noodles 
- Mixed in pesto and Parmesan 
- Added a few chili flakes and drizzled with balsamic glaze 
Voila! A delicious, quick meal that's perfect for busy summer days. Enjoy!
